Ingredients

  • 1cup mung beans
  • 6cups water
  • 2tablespoons cooking oil
  • 3cloves garlic minced
  • 1 onion chopped
  • 2 tomatoes chopped
  • 1cup spinach, malunggay leaves, alugbati
  • 1cup diced pork or shrimp optional
  • Fish sauce or salt to taste
  • Pepper to taste

Instructions

  1. Rinse the mung beans under cold water and pick out any debris.
  2. In a pot, combine mung beans with water. Bring to a boil, then lower heat and simmer until the beans are tender, about 30-45 minutes. Set aside.
  3. In a separate pan,heat the cooking oil over medium heat. Saute garlic until golden brown, then add onions and tomatoes. Cook until the onions are translucent and the tomatoes are soft.
  4. If using, add diced pork or shrimp to the pan and cook until fully cooked,
  5. Pour the cooked mung beans into the pan with the sauteed mixture. Stir well to combine.
  6. Add spinach, malunggay leaves or alugbati and cook until wilted.
  7. Season with fish sauce or salt, and pepper to taste.
  8. Serve hot with steamed rice.
