Galbi Jjim Recipe
Galbi Jjim also known as Korean Braised Short Ribs, is a traditional Korean dish that embodies the perfect harmony of sweet, savory, and umami flavors. This comforting dish features tender, succulent beef short ribs that are slow-cooked to perfection in a rich, flavorful sauce. Galbi Jjim is often enjoyed during special occasions and family gatherings, making it a beloved staple in Korean cuisine.

Ingredients
- 500grams beef short ribs
- 1large onion sliced
- 2 carrots cut into large chunks
- 2 potatoes cut into large chunks
- 4cloves garlic minced
- 1-inch piece of ginger sliced
- 1cup soy sauce
- 1/2cup brown sugar
- 1/2cup rice wine or mirin
- 1/4cup sesami oil
- 1/4cup sesami seeds
- 1pc apple or pear grated
- 2 green onions chopped
- 1/2teaspoon black pepper
- mushrooms, chestnuts, or dried dates for added flavor (optional)
Instructions
- Prepare the Short Ribs
- Begin by soaking the beef short ribs in cold water for about 30 minutes, changing the water once or twice. This helps to remove excess blood and impurities. Drain and pat the ribs dry with paper towels.
- Make the Marinade
- In a large mixing bowl, combine soy sauce, brown sugar, rice wine, sesame oil, grated apple or pear, minced garlic, sliced ginger, and black pepper. Mix well to create a flavorful marinade.
- Marinate the Ribs
- Add the short ribs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and let it marinate for at least 2 hours, or overnight in the refrigerator for best results.
- Cook the Ribs
- In a large pot or Dutch oven, arrange the marinated short ribs in a single layer. Pour the remaining marinade over the ribs. Add enough water to cover the ribs by about an inch. Bring to a boil over medium-heat, skimming off any foam or impurities that rise to the surface.
- Add Vegetables
- Once boiling, reduce the heat to low and add sliced onions, carrots, and potatoes. Cover the pot and let it simmer gently for about 2 or 3 hours or unitl the ribs are tender and the sauce has tickened.
- Finish and Serve
- Stir in the chopped green onions and sesame seeds, and let the dish cook for an about 5 minutes. Taste and adjust seasoning if necessary. Serve Galbi Jjim hot, garnished with additional sesame seeds and green onions if desired.
