Ingredients

  • 200grams bihon
  • 200grams canton
  • 250grams chicken breast or pork slight thinly
  • 200grams shrimp (optional) peeled and deveined
  • 1medium onion chopped
  • 3cloves garlic minced
  • 2medium carrots slice into stripe
  • 1small cabbage shredded
  • 1red bell pepper sliced
  • 2cups chicken broth
  • 3tablespoons soy sauce
  • 1tablespoon oyster sauce
  • Salt and pepper to taste
  • Calamansi or lemon wedges for serving
  • Green onions and fried garlic for garnish (optional)

Instructions

  1. Preparation of Noodles
    • Soak the bihon in warm water for about 10 minutes or until softened. Drain and set aside.
    • Cook the canton according to package instructions. Drain and set aside.
  2. Cooking the Meat and Shrimp
    • In a large pan or wok, heat oil over medium-high heat.
    • Add the garlic and onion, sauteing until fragrant and the onion becomes translucent.
    • Add chicken or pork slices, cooking until the meat is no longer pink.
    • Add the shrimp and cook until they turn pink. Remove the cooked meat and shrimp from the pan and set aside.
  3. Cooking the Vegetables
    • In the same pan, add a bit more oil if necessary.
    • Add the carrots and bell pepper, stir-frying for about 2-3 minutes.
    • Add cabbage and cook until it begins to wilt.
  4. Combining Ingredients
    • Return the cooked meat and shrimp to the pan with the vegetables.
    • Pour in the chicken broth, soy sauce, and oyster sauce. Stir to combine.
    • Add the softened bihon and cooked canton noodles to the pan. Toss everything together gently to ensure the noddles are evenly coated with the sauce and mixed with the meat and vegetables. Cook until heated through.
    • Season with salt and pepper to taste.
  5. Serving
    • Transfer the Pancit Bihon with Canton to a large platter.
    • Garnish with chopped green onion and fried garlic (if using).
    • Serve with calamansi or lemon wedges on the side for an addded zesty flavor.
