How to Cook Chicken Pastil
Chicken Pastil a traditional dish hailing from the Mindanao region of the philippines, is a delightful combination of seasoned chicken and rice wrapped in banana leaves. Known for its simplicity and rich flavors, Chicken Pastil is a staple in the Maranao cuisine and offers a burst of ethnic taste with every bite. Perfect for a quick meal or a packed lunch this dish is both hearty and flavorful.
Ingredients
- 500g chicken breast shredded
- 2cups of rice
- 2cups of water
- 2tablespoons vegetables oil
- 1medium onion finely chopped
- 4cloves garlic minced
- 1tablespoon soy sauce
- 1tablespoon fish sauce
- 1teaspoon ground black pepper
- 1teaspoon turmenic powder optional for color
- Banana leaves cleaned and cut into squares
Instructions
- Prepare the rice
- Rinse the rice under cold water until the water runs clear.
- Cook the rice in a rice cooker with 2 cups of water, Ser aside once done.
- Cook the Chicken
- Heat the vegetables oil in a large pan over medium heat.
- Saute the onions until translucent, then add the minced garlic and cook until fragrant.
- Add the shredded chicken to the pan and cook until it starts to brown.
- Season the chicken with soy sauce, ground black pepper and turmeric powder. Stir well to combine.
- Continue to cook the chicken mixture for another 5-7 minutes until the flavors meld together. Remove from heat.
- Assemble the Pastil
- Lay out a piece of banana leaf on a flat surface.
- Place a scoop of cooked rice in the center of the leaf.
- Add a generous portion of the cooked chicken on the top of the rice.
- Fold the banana leaf over the rice and chicken to create a neat package. Secure with a toothpick if necessary.
- Serve
- Serve the Chicken Pastil warm, allowing the banana leaves to infuse the dish with a subtle earthy aroma.
