Ingredients

  • 1kg pork shoulder or belly cut into bite-sized pieces
  • 250g pork liver cut into bite-sized pieces
  • 2large potatoes peeled and diced
  • 2large carrots peeled and diced
  • 1 red bell pepper diced
  • 1can (400g) tomato sauce
  • 1cup green peas
  • 1cup raisins
  • 1medium onion finely chopped
  • 4cloves garlic minced
  • 3tablespoons soy sauce
  • 2tablespoons fish sauce optional
  • 2cups water or beef broth
  • 2pices bay leaves
  • Salt and pepper to tast
  • Cooking oil

Instructions

  1. Marinate the Pork
    • In a bowl, combine the pork pieces with soy sauce and a pinch of salt and pepper. Let it marinate for 30 minutes to enhance the flavors.
  2. Saute the Aromatics
    • Heat cooking oil in a large pan over medium heat,Add the chopped onions, garlic.Sauteing until they become fragrant and translucent.
  3. Brown the Pork
    • Add the marinated pork to the pot, stirring occasionally until the meat is browned on all sides.
  4. Add the liver
    • Stir the pork liver and cook for another 2-3 minutes, allowing it to brown slightly.
  5. Simmer the Tomato Suace
    • Pour the tomato sauce and water (or beef broth). Add the bay leaves, fish sauce (optional), and a bit more salt and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes or until the pork is tender.
  6. Add Vegetables
    • Add the diced potatoes and carrots, continuing to simmer for another 10 minutes. The, add the bell peppers, green peas, and raisins. Cook for an additional 5-7 minutes or until the vegetables are tender.
  7. Serve
    • Serve hot with steamed rice and enjoy the rich, comforting flavors of this Filipino classic.
