Kimchi Jjigae

Kimchi Jjigae often referred to as kimchi stew, is a staple in Korean cuisine. This hearty and spicy dish is a warm embrace on chilly days, made primarily with aged kimchi, tofu, pork (or other proteins), and an array of aromatic ingredients. The fermentation of the kimchi brings a depth of flavor that is both complex and comforting, making it a beloved dish in households across Korea.


Ingredients

  • 2cups kimchi well-fermented
  • 200grams Pork belly or pork shoulder thinly sliced (can also use tuna ore seafood)
  • 1block tofu cut into cubes
  • 1medium size onion sliced
  • 2pieces green onions cut into 1-inch
  • 3cloves garlic minced
  • 1-2tablespoons gochugaru (korean red chili flakes) adjust to taste
  • 1tablespoon gochujang (korean red chili paste)
  • 1-2tablespoons soy sauce
  • 1tablespoon sesame oil
  • 3-4cups water or broth
  • Salt and pepper to taste

Optional Ingredients

  • Mushrooms Shiitake or enoki
  • Zucchini sliced
  • potatoes diced

Instructions

  1. Preparation
    • if using pork, cut it into thin slices, If using seafood, clean and prepared accordingly.
    • Slice the onions and cut the tofu into cubes.
    • Mince the garlic and cut the green onions into 1-inch.
  2. Cooking
    • Heat a large pot over medium heat and add the sesame oil.
    • Add the pork sliced and cook until they start to brown.
    • Add the minced garlic and sliced onions, and saute until the onions are translucent.
    • Add the kimchi and cook for about 5 minutes. allowing it to release its flavor.
    • Stir in the gochugaru and gochujang, mixing well.
    • Pour in the water or broth, enough to cover the ingredients, and bring to a boil.
    • Reduce the heat to medium-low and let it simmer for about 29 minutes.
    • Add the tofu and optional vegetables like mushrooms, zucchini or potatoes. Continue to simmer until the vegetables are cooked through.
    • Add soy sauce, salt, pepper to taste. Adjust the seasoning as needed.
  3. Finishing
    • Once everything is well-cooked, add the green onions and let then wilt slightly.
    • Serve hot with steamed rice on the side.
