Gimbap

Gimbap, sometimes spelled as Kimbap, is a beloved Korean dish that wraps a variety of ingredients in seaweed (gim) and rice (bap). This versatile and vibrant dish id often enjoyed as a picnic snack, lunchbox treat, or a light meal. It’s similar to sushi but has distinct flavors and ingredients that make it uniquely Korean.
Ingredients
- Rice
- 2 cups short-gain white rice
- 2 cups water
- 2 tablespoons sesame oil
- 1/2 teaspoon salt
- Fillings
- 5 sheets of gim (seaweed)
- 1 large carrots sliced into strips
- 1 cucumber sliced into strips
- 5-6 strips of danmuji pickled radish
- 5-6 strips of crab sticks or imitation crab
- 3-4 eggs
- 1 cup spinach, blanched and seasoned with salt and sesame oil
- 100g beef or ground beef ,marinated and cooked optional
- Seasoning
- Soy sauce
- Sesame oil
- Salt and pepper
- Sugar
Instructions
- Prepare the Rice
- Rinse the rice until the water runs clear. Cook it with the water in a rice cooker. Once done, let it cool slightly and mix in sesame oil and salt.
- Prepare fillings
- Slice into strips the carrots and cucumber.
- Blanch the spinach, season with salt and sesame oil.
- Beat the eggs, cook them into thin omelets and slice into strips.
- Cook the marinated beef until done.
- Arrange all the fillings on a plate for easy assembly.
- Assemble the Gimbap
- Place a sheet of gim shiny side down on a bamboo mat.
- Spread a thin later of rice over the gim, leaving a 1 inch gap at the top.
- Lay a strip of each filling horizontally across the rice, about 1/3 of the way from the bottom.
- Roll the gimbap tightly using the bamboo mat, applying gentle pressure to form a cylinder. Seal the edge with a bit of water.
- Slice the roll into bite-sized pieces using a sharp knife, wiping the blade with a damp cloth between cuts to ensure clean slices.
- Serve
- Arrange the gimbap pieces on a plate and serve with soy sauce or preferred dipping sauce.
