How to cook Pata tim
Pata tim is a whole leg pork cooked long and slow in a sweet and savory sauce.
Ingredients
- 1kl pork legs (pata,sliced or whole)
- 1pc Pork knorr cube
- 1in can pine apple chunks
- 1piece onion meduim size (chopped)
- 4cloves garlic (minced)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 5pcs dried bay leaves
- 1 1/2 cups water
- 1 teaspoon whole peppercorn
- 3 tablespoons cooking oil
- Salt to taste
Steps on how to cook
- Boil the pork leg (pata) in pressure cooker, If you dont have a pressure cooker you can use a pot. Boil it for 15 minutes.
- After boiling. take the pork leg (pata) out of the pressure cooker or cooking pot and wash it in running water.
- Discard the water in the pressure cooker
- Heat cooking oil in a cooking pot. Saute garlic and onion.
- Add the boiled pork leg (pata) once the onion softens
- Pour soy sauce,pineapple juice and water and boil again
- Next add the pepper corn, dried bay leaves and pineapple chunks.Boil again for 18minutes.
Notes: If not using a pressure cooker, boil pork for 90minutes on a regular coking pot. Make sure to add water if the liquid is about to dry-up
- Add knorr pork cubes and brown sugar. Stir it. Let it simmer umtil the sauce reduces to half.
- Season with salt and boil again for about 5 minutes.
- Transfer to a serving plate.
