How to cook Pata tim

Pata tim is a whole leg pork cooked long and slow in a sweet and savory sauce.

Ingredients

  • 1kl pork legs (pata,sliced or whole)
  • 1pc Pork knorr cube
  • 1in can pine apple chunks
  • 1piece onion meduim size (chopped)
  • 4cloves garlic (minced)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 5pcs dried bay leaves
  • 1 1/2 cups water
  • 1 teaspoon whole peppercorn
  • 3 tablespoons cooking oil
  • Salt to taste

Steps on how to cook

  • Boil the pork leg (pata) in pressure cooker, If you dont have a pressure cooker you can use a pot. Boil it for 15 minutes.
  • After boiling. take the pork leg (pata) out of the pressure cooker or cooking pot and wash it in running water.
  • Discard the water in the pressure cooker
  • Heat cooking oil in a cooking pot. Saute garlic and onion.
  • Add the boiled pork leg (pata) once the onion softens
  • Pour soy sauce,pineapple juice and water and boil again
  • Next add the pepper corn, dried bay leaves and pineapple chunks.Boil again for 18minutes.

Notes: If not using a pressure cooker, boil pork for 90minutes on a regular coking pot. Make sure to add water if the liquid is about to dry-up

  • Add knorr pork cubes and brown sugar. Stir it. Let it simmer umtil the sauce reduces to half.
  • Season with salt and boil again for about 5 minutes.
  • Transfer to a serving plate.
